Monica Scott has produced one of the first complete recipe cookbooks featuring microwave soups. “I got tired of looking for collections of recipes,” she says, “so I decided to produce my own.” Here finally are her favorites—more than 50 quick, easy, and tasty soups that you can make in fewer than 20 minutes in your microwave. Her recipes include the use of basic vegetables like potatoes, onions, split peas and asparagus, but also incorporate foods like lentils, turkey, chicken, and broccoli. You will find her simple quick basic potato soup, but other potato recipes featured are potato bacon, cream of potato; creamy beef, sausage and potato; leek and potato, and more. To excite your dinner guests, you’ll want to try some of the unique methods described to produce oriental chicken soup, cream of broccoli cheese soup, Provence fish soup, or Monica’s super split pea soup. Tasty, yes, but also nutritious. She points out that using a microwave with small amounts of water steams food from inside out and keeps more vitamins and minerals than any other cooking method. Microwave cooking heats fast and keeps nutrients from escaping. In short, cooking that keeps nutrients best is one that not only heats quickly for a short time, but also uses little liquid. To get started with these wonderful recipes, you only need a microwave, a high-speed blender, and a few microwave friendly dishes, bowls and plates that Monica describes. A "must have" for gourmets and casual cooks who want to cook quick and healthful meals By Amazon Customer It is hard to survive in our society and be healthy in the modern age. This book is an easy to follow, practical and delicious pathway to nutritious and quick meals. Not only does it have phenomenal recipes, but great cooking tips (who knew that you did not have to soak beans overnight!--you can put them in the microwave for a short time). No more crying while cutting onions--the microwave is your answer. These are healthy whole food recipes for the busy modern person without compromising nutrition and quality. A must have for healthy gourmets and casual cooks alike.

But you want this cookbook. These recipes are easy, most of them are delicious, relatively healthy and a good mix of omnivore and vegetarian recipes. I wish every soup had its own picture but the pictures that are there are very well-done. The very first soup I made was a lima bean soup. I hate lima beans but I loved that soup. In retrospect, I'm not sure why I chose that as my first recipe out of this book but I'm glad I did as it has made me open to trying recipes I wouldn't normally bother with. The book is well organized starting with various stock recipes (none of which I have made), then chicken soups, tomato soups, chowders, and then by season.I used this book as an excuse to get an immersion blender and it's now my favorite kitchen gadget of all. I need to write a review of that too. Other than that, buy this book and make some soup! Highly recommended!!

Apart from those wide range of excellent recipes she also tells us about the advantages of microwaves, it cleared some myths I had in my mind about microwave ovens but some of the points and facts given here opened my mind and become less afraid of cooking food in a microwave. The fact that it preserves more nutrients was an eye-opener. There are also some valuable information on the type, shapes and material of dishes used in microwaves. Monica’s kitchen tips are valuable as well. The recipes are given with easy to follow instructions and my favorite ones are Mixed Vegetable Cream Soup, Leek and potato soup and Lentil hamburger soup and I have just started. I am very excited to try other soup recipes as well and with winter round the corner my family is going to love these tasty and healthy soups. Thank you Monica.
