This excellent cookbook is an impressive accomplishment, practically flawless. Simple, basic but sophisticated recipes using all natural, fresh ingredients, cleanly written, clear directions, and, best of all, each recipe is illustrated with clear, attractive photographs. Anyone could cook with this book. This cookbook is one of the best demonstrations of what can be achieved in the world of self-publishing that I have encountered. In general, I think, the best cooks employ simplicity, as in these recipes. The recipes are very European, with minimal emphasis on red meat. which means that they will make for a refreshing change for U.S. cooks. I don't usually review cookbooks until I have cooked with them for awhile, but I didn't think it was necessary with this one. I have been reading, collecting, and cooking recipes and cookbooks for many decades now, and I recognize good recipes when I encounter them. Disclosure: I have an irrational hatred of seafood, so I skipped that chapter (but read the rest of the book very carefully). Delicious reading. The plethora of diet cookbooks in the United States would be unnecessary if people cooked on a daily basis with simple, flavorful and hearty recipes like these. It is obvious that the author put a lot of time and love into refining these recipes. Another disclosure: I have no relationship with the author; never hear of her before, lest my rave review should lead anyone to suspect that I am talking up a friend's book. Don't pass this one up!

So far I love this cookbook! :) I love vegetables and there is a lot of really good recipe options I have never tried. This cookbook is very easy to manuver through, it's broken up into sections so that is really helpful!

The healthier and easier the better!I experiment with new recipes one to two times a week, as I don't want to get bored with my food, and to be honest, I enjoy flavour and having a delicious meal at home.Mediterranean Healthy Gourmet seems to check all my requirements with seriously simple recipes that have quick prep time, and quick cooking times!I've dived into actually cooking two of the side dishes so far. And both were cooked in the microwave, which is a REALLY odd way for me to cook - I'm usually anti-microwave, but figured it might be good - worst case scenario, It tastes bad and we gorge on Pita and Hummus afterwards.I'm new to eating Sweet Potatoes, but am trying to eat better - so I tried the Potatoes and Sweet Potatoes recipe first. It was stinking quick to prepare, and then in the microwave it went. I'll be honest - I have this conception that microwave cooked food would be over or undercooked, taste weird, or dry out. By using a touch of olive oil, not only was this meal cooked in 8 minutes (I took time off for our more powerful microwave), everything was cooked perfectly! So much so, I cooked it again last night and Husband even ate some sweet potatoes (which he hates). SCORE!The second recipe I've tried is the "Speed of light" Zucchini - which uses Dill, a new ingredient for me - seriously, I've never cooked with Dill, thinking it would make food taste like pickles (I love pickles, but not for my meals to taste like it. And it's another microwave meal. Easy peasy prep and 6 minutes in the microwave, we had perfect Zucchini. Normally husband complains about my zucchini cooking skills, but he ate every last piece. The dill was not overpowering at all - I think I'm hooked!Obviously I conquered two cooking fears with this recipe book - it's good to try new things!With a plethora of uncomplicated soups, vegetables, salads, pasta & rice, fish, poultry, beef, and dessert recipes, I'm looking forward to further venturing into the Mediterranean eating culture.I cannot again stress the speed and efficiency of creating these meals, and the delicious tastes - life is so busy, but there should never be an excuse not to eat healthy at home! This recipe book helps immensely!***I received this book at no cost to review for my honest opinion***
