Food is very important to the folks in Jamaica, they work very hard and are grateful for so much. They literally live in paradise and appreciate the gifts of great weather, ample fields of harvest and having some of the finest chef’s anywhere. I found this cuisine because of my love of history, and a friend of mine that knew of a great Jamaican restaurant in New York City. I am forever indebted to him because I never knew how delicious the food was and I have found myself cooking more this style with many main dishes that are part of this collection. A little known fact by most outsiders, Christopher Columbus, oh what a busy beaver he was in the late 1400’s, found Jamaica and claimed it for Spain. There were two tribes of natives, the Arawak and Taino peoples that inhabited the island then. It was originally named Santiago and was ruled by Spain until 1655, when the British invaded and took possession of the island, and the British named it Jamaica. The Jamaican people finally broke away from British rule in 1962. Jamaica is also well known for its Jamaican Jerk Spice, the popular Red Stripe Beer and Jamaican Blue Mountains Coffee. Jamaican cuisine is very diverse and of Rastafarian significance. Rastafarians use vegetables heavily in their cooking and eating. They have introduced many vegetarian dishes to the Jamaican style of cooking over the years. They do not eat pork, and those with a stringent belief don’t eat meat of any kind, that including poultry and fish. The island accepted European visitors very early on, and they introduced dishes like the famous escovitched fish, a vinegar based concoction which is hugely popular. Later in years, new inhabitants arrived from Spain, and eventually the empanada style turnover was introduced. This is still very popular and is filled with spiced meats. Eventually African cuisine was also introduced, and many of these delicious dishes have a firm hold of this island’s staple recipes. Today the Jamaican people have created a great style and cuisine all their own, and they have some very tasty and spicy dishes that are a cumulative mix of many food cuisines and cultures. All of the recipes in this book are 100% authentic to the island and the Jamaican people. They include authentic recipes for: • Soups • Side dishes • Chicken • Meats • Seafood • Desserts Any authentic Jamaican will recognize these dishes and even if you aren’t lucky enough to be Jamaican, you can still experience the culture through their food and spices. I was pretty impressed with the first book in this series By auctionjjk I was pretty impressed with the first book in this series: 50 of the most Scrumptious, Tantalizing, Mouth-watering Italian Recipes ever Assembled (Out of This World Recipe Series Book 1) - so I decided to get the 2nd Book - the Jamaican Recipe book. I'm GLAD I did .. I was looking for a side dish for the bbq chicken we had last night and I came across the Jamaican Festival dumplings) in this book. Easy to prepare and cook - a great alternative to the cornbread we normally have with he meal. There are other recipes I will definitely try in the future.
